Alex Murray, born and bred in Portsoy on the Aberdeenshire coast, grew up working on a dairy farm before he opened the Portsoy Ice Cream café in the village in 2003.

That upbringing gave the business an element of continuity, and the much-vaunted café has gone on to win award after award for its artisan ice creams and sorbets. Portsoy itself is a charming coastal village to visit at any time of year, with winding streets and an attractive harbour. Look out too for the local jewellery, made from a serpentinite stone known as Portsoy marble. A wander round the harbour followed by a cone from Alex's café is a lovely way to spend an afternoon on this stretch of the coast.

At Baern Café in St Monans, in the East Neuk of Fife, leftover kimchi juice goes into the sourdough and corn from the soup becomes a sweetcorn and tarragon lemonade.

The chef Hazel Powell and the baker Giacomo Pesce share an ethos built on the seasons, the environment and zero waste, so Baern's leftovers always get used somehow. Their small menu changes weekly and comes almost entirely from their neighbours at Bowhouse, a hub set up to connect small growers and producers with restaurants and shoppers. The vegetables come from a nearby market garden, the fish is landed in St Monans, and the flour for the bread comes from Scotland The Bread, which grows small-scale heritage grains for their goodness rather than for yield. Ask Hazel what visitors must try and she names the sausage rolls, 'And always the bread'.
