A Michelin-starred restaurant with eight suites in an 18th-century coaching inn near St Andrews. The village took its name from the inn.

A few miles inland from St Andrews, among the farms of north-east Fife, stands an inn so old that the village around it took its name.

The Peat Inn is thought to have been built in the middle of the 1700s, and it has been a coaching inn, a hotel, a pub and a restaurant, giving it an unusual address: The Peat Inn, Peat Inn.

Geoffrey and Katherine Smeddle have run it since 2006, and it has held a Michelin star since 2010. Geoffrey, who studied history at university before he became a chef, cooks seasonal Scottish ingredients with a calm, careful hand, served in three small dining rooms, with a log fire burning in the lounge.

The Residence has eight suites, most of them split over two levels, so that dinner can end with a short walk to bed. It is a place for a special occasion, and booking is essential.
