Where to eat in Dumfries and Galloway.

Dumfries and Galloway is farming and fishing country, and it eats well. Have a drink in the inn that was Robert Burns's favourite in Dumfries, coffee in a turf-roofed coffee house on the clifftop at the Mull of Galloway, or seafood by the harbour at Portpatrick. There are country house hotels in the forests, cafés in the market towns, and jams and chutneys made in Gatehouse of Fleet. Book ahead in summer.

Kit Carruthers, the distiller behind Ninefold, makes rum from scratch in a converted stone cattle byre on his family's farm near Lockerbie, in Dumfries and Galloway.

He ferments and double distils North African sugar cane molasses himself at Dormont Home Farm. As he puts it, 'It takes around two weeks to make my rum, and I bottle and label on site too'. He makes an unaged white rum and a spiced rum, and more lies ageing in barrels in a warehouse on the farm. The name comes from the brand's logo, a six-winged angel from the Carruthers family crest: 'ninefold' refers to the angel being at the ninth level in the celestial hierarchy. Tours are arranged in advance with the distillery.
