Where Henderson Street meets the Water of Leith, a dark green front with its name in white script across the glass looks out over the river towards the Shore.

This is Heron, opened in 2021 by two young chefs, Tomás Gormley and Sam Yorke, who had first made their names during lockdown with a food delivery business called Bad Seeds.

In March 2023, less than two years after the doors opened, Heron was awarded a Michelin star, and the pair were among the youngest Scottish chefs ever to win one. The cooking is elegant, beautifully balanced and uncluttered, built on the best of Scotland's produce, and the room is relaxed rather than formal, with the river running past the windows.

Heron opens for dinner from Wednesday to Sunday, and for lunch at the weekend. Tables are best booked well ahead, on 0131 554 1242.
