Flùr
A New York-style pizza and pasta kitchen in the Bonnie & Wild food hall at St James Quarter, opened in 2026, selling 18-inch pies and single slices.
Flùr brings New York pizza to Level 4 of St James Quarter, at a counter inside the Bonnie & Wild food hall.
It was created by Ivan Stein, co-founder of The Gannet in Glasgow, who worked on the dough with the pizza consultant Anthony Falco and uses Scottish-milled flour, which is where the name comes from: flùr is Gaelic for flour. The pies are eighteen inches across and sold whole or by the slice, from a classic Margherita and Pepperoni to Nduja and Honey and a home-made salsiccia. There's fresh pasta too, from bucatini carbonara to ziti with a Genovese ragu, with garlic knots, arancino bites and dishes for children. It's open every day from noon until nine, or half past nine on Friday and Saturday. There's no booking: find a table in the hall and order at the counter, by card only. The hall is almost entirely level, with lifts up from every floor.
