In the village of Edinbane, on the road from Portree to Dunvegan, an old stone lodge stands behind hanging baskets, a stag's antlers mounted above its gabled door.

Inside, beamed and wood-panelled corridors lead past a small bar to a dining room of dark tables and high-backed leather chairs.

Dinner here is a single tasting menu of many small courses, built round what the island produces through the year: shellfish and fish from Skye waters, meat cooked over charcoal, herbs and flowers, bread from the kitchen with whipped butter. The lodge has its own rooms, so nobody needs to drive home down dark island roads afterwards.

Dinner is a single multi-course tasting menu that changes with the seasons.

Book ahead, and tell the restaurant about any dietary needs when you do.

The lodge is reputedly the oldest inn on the island, dating back to 1543. It was completely renovated and restored in 2018.

In 2022 the AA gave Edinbane Lodge four rosettes, the first restaurant in the Highlands to be awarded them.

The chef, Calum Montgomery, and his wife Eilidh are both from Skye, and most of the crofters and fishermen who supply the kitchen are relatives and childhood friends.

Calum Montgomery started cooking professionally at 14, and has since been invited to cook aboard superyachts, among them KAOS, Elysian and Avanti.

The food comes to the table on local crockery, and the bedrooms are furnished with handmade ceramics from Edinbane Pottery and paintings by the Skye artist Katie Tunn.

Cooked the old way, by necessity.

Every dish is made in the lodge kitchen, as it was for generations, when cooking everything at home was a necessity rather than a choice. The menu leans on old ways of preserving, alongside new techniques.
