Cocktails only, in 2006.
Mike Aikman and Jas Scott opened Bramble in 2006, when a basement bar serving nothing but cocktails was an unusual sight in Scotland.

A cocktail bar in a New Town basement on Queen Street, opened in 2006 beneath a dry cleaner's, its door marked only by a small brass plaque.
Walk along Queen Street and it is easy to go straight past.
A small brass sign on the railings is the only clue, and the steps lead down below the pavement into the dark.
Down there, Bramble is a warren of low stone rooms and candlelit corners: green and grey banquettes piled with pink and patterned cushions, small round tables, a framed saxophonist on one wall, a stone nook with an old concert poster. Behind the bar the shelves glow with bottles. The drinks are the reason people come, from a blackberry and mint cocktail poured over crushed ice to a layered orange drink strained through a fine sieve. Go early in the evening for a seat, and let the bartenders guide you through the menu.
Look for the small brass plaque on the railings: the bar is down the steps, below street level.
Inside it is dark and loud, with hip-hop playing.

Mike Aikman and Jas Scott opened Bramble in 2006, when a basement bar serving nothing but cocktails was an unusual sight in Scotland.

The basement had been a traditional pub. One of the first things the owners did was rip out the beer taps, and people asked how a pub could possibly have no draught beer.

The first menu ran to about twenty cocktails, some built on spirits nobody else was using, like applejack, beside easy ones like a lavender martini.

The bar sits beneath a dry cleaner's shop, and its entrance is marked only by a small brass plaque on the railings.

From the start it was dark and loud, with hip-hop on the sound system: in the words of one owner, a party bar that happens to make serious cocktails.
