Swadish is the chef Ajay Kumar's restaurant on Ingram Street in the Merchant City, and it sets out to change how people think about Indian food.

It holds two AA Rosettes and national awards, and Kumar cooked on Great British Menu in 2024. The idea is to bring the spices, aromas and traditions of India together with the best of Scottish produce, from the North Sea to the Highland pastures.

The menu leans on seafood, delivered every day by local, independent fishmongers and cooked with influences from all over India, and on game and meat from local suppliers. Slow roasting and smoking sit beside modern, careful plating, so a dish of scallops, lamb or a rich curry looks new on the plate and tastes unmistakably Indian. The desserts are short and sweet, made in house, and some arrive under a cloche of smoke. Swadish opens from Wednesday to Sunday, from one, or noon on Friday and Saturday, and is closed on Monday and Tuesday.

Swadish opens Wednesday, Thursday and Sunday from 1pm to 10pm and Friday and Saturday from noon to 11pm.

It is closed on Monday and Tuesday.
