At the east end of Princes Street, where the clock tower of the Balmoral stands over Waverley station, Number One is the hotel's fine dining restaurant, one of the best known in the city and a long-standing name in the Michelin Guide.

The evening begins with an aperitif in the small, plush cocktail bar, then moves through to a dining room of red lacquered walls hung with pictures, richly upholstered banquettes and tables laid in white. Dinner is a tasting menu of seven courses, built on the finest Scottish produce and a few luxuries from further afield, from hand-dived Orkney scallops to caviar, with a wine list to match.

Number One serves dinner only, from six in the evening, and is closed on Tuesdays and Wednesdays. Tables are booked directly with the restaurant, on 0131 557 6727.
