Edinburgh’s cocktail revival, they say, started here. On an Old Town back street, the décor’s eclectic, the playlists genre-spanning and the cocktails everevolving. A herbaceous and complex 'Plum & Dandy' marries spirits from one of the oldest centres of Scottish distilling, Lindores Abbey, with one of the newest, Copenhagen’s Empirical, seasoned with chamomile and hops and topped with plum ‘leather’.
