Walk down the Royal Mile past John Knox House and the smell reaches you before the shop does.

Fudge Kitchen, at 30 High Street, makes its fudge in the shop, and the staff stand at the door offering pieces to anyone passing on the cobbles.

Fudge Kitchen was founded by an Irish-American, Jim Garrahy, and now has shops across the country. The fudge is made in the American style, with whipping cream rather than butter, and the Edinburgh shop keeps a Scottish flavour of its own, cranachan, among the rest on the counter. Beyond the slabs there are fudge sauces and drinking fudge to take home.

The shop opens every day, and for anyone who wants to learn how it is done, fudge-making experiences can be bought as gifts.
