Inside Lundies House.

Lundies House is a 19th-century church manse in the little village of Tongue, on Scotland's wild north coast, made into a small hotel with Scandinavian design inside. Downstairs are a lounge, a study and a candlelit dining room, and upstairs the bedrooms look out over the Kyle of Tongue. Dinner is three courses of local produce from sea and land, with things foraged from the shore and the woods, served on ceramics by Scottish and Danish makers.

Links House in Dornoch is starting night-time wildlife safaris with thermal cameras.

Local guide Kurt Connell drives guests into Sutherland after dark to look for pine martens, deer, foxes and badgers through a 360-degree thermal camera, without leaving the vehicle. It runs from the end of September to April, from £275 a person.
