Maki & Ramen began in Edinburgh in 2015, founded by Teddy Lee, who learned to cook in Tokyo, and was inspired by the hundreds of little ramen shops of Japan.

Its Glasgow restaurant on Renfield Street is a cheerful room hung with red paper lanterns, with a ceiling of pink blossom in one corner and a lucky cat on the counter.

Ramen is the heart of it. The noodles are made by hand and the broth simmered for eight hours in the company's Edinburgh kitchen, and the signature is the tonkotsu, a rich pork broth topped with slices of pork, a soft egg, seaweed and spring onion. There is miso and spicy ramen too, and a long list of sushi and maki rolls, tempura and small plates, so everyone round the table will find something. It suits a quick bowl on your own as well as a group. Maki & Ramen is open every day from noon until ten, and eleven on Friday and Saturday.
