The cooking is built on seafood from Scottish waters, sustainably sourced, with good things from further afield too.

The dining room is bright and elegant, with tall windows, green velvet banquettes, marble tables and clusters of glass lights, and a round bar at its heart. Plates are contemporary and carefully dressed: scallops and fish with delicate sauces, shellfish, and seasonal dishes from the land, with a classic cocktail list that includes the famous Oyster Shell Martini. The bar serves a lighter menu through the afternoon and small bites into the evening. Lunch is from noon until half past two every day, and dinner from five until nine, and the bar is open from noon until eleven. For now the restaurant itself is closed for maintenance, and dining and drinks are being served in The Salon on the first floor.
