Distilling on Skye goes back a long way, and today the island and its neighbour Raasay make whisky and gin full of character. Visit the island's oldest working distillery on the shore of a sea loch, a newer one in a restored farm steading, a distillery in a Victorian villa on Raasay or a family-run gin distillery in Portree. Tours and tastings are best booked ahead, and if you're driving, ask about taking a dram home for later.

The Isle of Raasay Distillery's house is named after an Iron Age broch, a round stone tower that stands in ruins a short walk away.

The Victorian house that holds the distillery was built as Borodale House, and its name comes from Dun Borodale nearby. The broch once stood more than 20 feet tall. Today it is a scatter of stones in which a gallery in the wall, steps and a doorway can still be made out, and it makes a walk for anyone who would rather skip the tour.

Talisker distillery on Skye works an odd number of stills, five, which may be a leftover from the days when it distilled its whisky three times.

Two wash stills do the first distilling and three spirit stills do the second. That uneven line-up is thought to go back to Talisker's years of triple distillation, when the spirit went through the stills a third time. The third distillation stopped in 1928, but the extra still stayed.

Torabhaig Distillery in Sleat has launched its Distillers' Series, whiskies made start to finish by its own distillers.

Each year two of the nine distillers take over the stills for a month and choose the malt, the yeast, the fermentation and the casks. The first two editions, one built on chocolate malt and one on a coastal, rum-cask style, are £75 and limited to 5,250 bottles each.

The Stein Inn, on Skye's Waternish peninsula, has the year 1790 carved above its door, and the folk singer Donovan was a regular there in the 1960s and 70s.

The wooden sign over the threshold marks it out as the oldest inn on Skye, and over the years it has seen plenty. It stands in Stein, a small shoreline village first planned as a fishing settlement by the British Fisheries Society and laid out by the engineer Thomas Telford, whose plans ground to a halt in 1798. Inside you will find rough stone walls, log burners and overhead beams, with langoustines, mussels, crab and lobster landed on a slipway close by, and some 130 single malts behind the bar. Some pubs make you work for your pint: arriving on Skye by road, it takes a full 1 hour 20 minutes to drive up to this one.

Long a rumour, it is now confirmed: when Torabhaig Distillery compared the stone, the old farm steading it was built in turned out to have been made with stone taken from the castle.
