Shetland Islands
Hill lamb, Vidlin mussels and haddock.
Shetland's restaurants cook what the islands land and grow, and they're happy to tell you where it came from. On Commercial Street in Lerwick, a family kitchen changes its menu with the season, guided by local crofters, fishermen and bakers. Half an hour north at Brae, Britain's most northerly chip shop fries haddock and cod from Shetland ports, with Vidlin mussels and hand-dived scallops besides. Beyond Walls, at the end of a single-track road, a laird's house of 1759 cooks the day's fish and lamb from the hill. Book ahead for dinner, and especially for the house out west.
