Orkney
Heather-peat malt and Kirkwall gin.
Kirkwall makes both whisky and gin, and both distilleries are in the town. On its edge, a cluster of dark stone buildings has been making whisky since 1798, and Orkney's own heather peat gives the malt its warm, gentle smoke. Down on the waterfront, a newer distillery makes a gin named after the old Norse name for Kirkwall, using botanicals grown on the islands, and its bar upstairs looks out over the harbour. Tastings at the whisky distillery need no booking, but book the guided tours ahead.
